The short answer
Approach a friendly tameable animal and inspect its Tame prompt. Offer the food it requests; hearts indicate success. Some animals can then be milked, sheared or mounted.

- Taming was introduced in Update 3.
- The current prompt takes precedence if a food requirement changes.

After the hearts appear
Use an empty hand to pet a tamed animal. The available productive interaction depends on the species. Tamed animals usually remain near players without fleeing, but hitting them changes that behaviour.
Kingy preparation note: make the enclosure and clear an approach before carrying rare food across the map. Confirm the prompt instead of assuming every passive-looking creature supports taming.
