Joan waits on the roof of the Prison Tower in the Paris Streets, and beating her gives The Warrior Arcana with the Infernal Pyre spell, The Warrior's Key, her Burnt Sword of Fierbois and, just after, the Holy Light ability. Slide under her ordinary sword swings and jump her low sweep, stand between the falling fireballs, and when she leaps into her big phase-two attack, whip onto one of the two rings above the arena.
Kingy has not played the released game. The strategy comes from three written guides that agree on the main counters; where they differ, both versions are given.

Where you fight her
Two guides put Joan on the roof of the Prison Tower in the Paris Streets. One walkthrough climbs the tower, rides a hidden lift back to the Upper Tower, then runs west up the stairs on the Roof of the Tower to the boss room, where a cutscene starts the fight.
You meet her after The Fallen; one guide says she comes soon after that fight.

Open the map to Paris Streets – Prison Tower and head for the Upper Tower. Climb through the tower's wooden rooms and up the long outdoor staircase; the fight begins with a cutscene over the burning city.
One guide adds a long-range slash that reaches across the arena almost at once, so stay ready to jump or slide even at a distance. If you have the Holy Cross from The Fallen, one guide suggests it for extra damage whenever you have the MP.
Attack straight away: one guide says she holds back for a moment at the start, and another says it's safe to attack as soon as you can move. Back off when she winds up.
Ordinary sword swings: slide under them, or slide through her, and attack her from behind (all three guides). One guide says a middle-height wind-up behind her is the swing to slide under.Spoiler clip · Staying low under Joan's sword swing · reveal
Low sweep: when she drags her sword along the ground, or pulls it up high behind her, she is about to slash low. Jump it or back away (two guides); one guide warns that a slide doesn't avoid it.Spoiler clip · Jump Joan's low sweep, then hit her as you land · reveal

From behind: she has one backward attack, a jab or strike that comes without turning round. One guide says you can jump or slide it.
Fire rain: fireballs gather above the arena, then fall and burst into pillars of flame. Stand in the gap between two impact points (all three guides). One guide says not to jump while they strike; another says to jump straight up just before they explode.Spoiler clip · Standing in the gap when Joan's fire rain lands · reveal
One walkthrough adds that the arena's anchors are disabled for a short while after you use them.
At half health she starts phase two (one guide says she sets herself on fire). Keep using the phase-one counters for her usual attacks.
For her big attack she draws energy and leaps into the middle of the arena, or rises into the air. Don't try to dodge it on the ground: whip onto one of the two rings above the arena and stay in the air until it's over (two guides).Spoiler clip · Whipping onto a ring for Joan's phase-two attack · reveal
Rose takes Joan into her Tarot Deck as The Warrior Arcana. It unlocks Infernal Pyre, a spell that sends flames along the ground and launches enemies into the air (all three guides).Spoiler clip · The Warrior card and Infernal Pyre · reveal
You also get The Warrior's Key, one of the keys for the Catacombs gate (two guides).
Before you leave the arena, pick up Joan's weapon, the Burnt Sword of Fierbois, a heavy blade (two guides).Spoiler clip · Taking the Burnt Sword of Fierbois · reveal

Afterwards you get Holy Light: hold it to pass through Chaos Shards, and time it just before a hit to parry (two guides). One walkthrough says Joan gives it to you at the Chaos Shards on the Stairs to the Tower Roof, after you leave by the arena's right exit.
